Vegan Essentials You Didn't Know You Needed
If you have been thinking about going vegan (or plant based) I am here to help get you started with some vegan essentials no one tells you about.
I tried going vegan when I was in high school and failed miserably. I wish I would have had a vegan mentor or did more research myself, to have gone about a vegan diet in a healthier way. Instead, I lived off peanut butter jelly sandwiches... Until I developed a peanut allergy. The universe has a cruel sense of humor.
As I am on my new and improved vegan lifestyle journey, I have been able to compose a list of kitchen essentials that I highly recommend keeping in your pantry at all times. These items come up a lot when I am looking for plant-based recipes. And as always, none of these items are too expensive or hard to find.
1. Nutritional yeast: This bad boy can be found in the spice isle. It averages around $5 at most grocery stores. It has a "cheesy" flavor to it, and turns into a thicker consistency when cooked. I use this for tofu scramble (adds an eggy flavor), pasta (richer consistency), baked cauliflower (mixed into a batter). This item is a top recommendation.
2. Flaxseed: Averages around $4. Two words; egg replacer. One tablespoon of flaxseed mixed with water is equivalent to one egg. Perfect for pancake, pastries, cakes, and whatever other recipes call for eggs. You get the idea. It's also goo to throw in to smoothies as a thickener.
3. Coconut milk: About $2. Specifically full-fat canned coconut milk. It comes up a lot more than you would expect for baking and cooking. I always kept accidentally buying cream of coconut, THEY ARE NOT THE SAME THING.
4. Virgin coconut oil: And a lot of it. It's about $12 for the big jar. Do yourself a favor and just buy the big jar. It's not only useful for cooking, but also good for health, teeth, and skin (in small amounts). I honestly have 3 jars of virgin coconut oil all for different purposes.
5. Cocoa powder: Usually around $5. This is essential if you love chocolate before going vegan. I throw a teaspoon of cocoa into my oatmeal, smoothies, milk, you name it. If you like to bake, definitely keep it on hand. You will use it in a lot of it each recipe.
6. Chickpeas: Also known as Garbanzo beans. A can of cooked chickpeas is usually less than $1 so stock up. They are an excellent source of protein, and so diverse. You can throw them into a salad for a little razzle-dazzle, or make them their own plate, such as hummus.
