Avocado Brownies
Hi all I hope everyone is still sane and healthy.
I think now is a good time to share my favorite desert recipe since becoming vegan. Yes, I am talking about avocado brownies! If you have never baked before, no worries, I made this dummy proof.
Cooking material:
These brownies are very rich and on the chewy side, so adding crushed walnuts, pecans, or even chocolate chips (dairy free of course) adds to the texture. It is easier to cut the brownies while they are hot, and the small squares allows them to cool evenly, but definitely try them while they are still warm! If you have left overs, place them on a plate or container lined with wax paper, and refrigerate.

Cooking material:
- 13" x 9" (or smaller) baking pan
- Wax or parchment paper
- Hand held or large beater
- Large mixing bowl
- Measuring cups
- Measuring spoons
Ingredients:
- 1 cup (3 small or 2 large) avocados
- 2 cups all purpose flour
- 1 1/2 cups sugar
- 3/4 cups cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup plant milk
- 1 teaspoon vanilla extract
- 1 table spoon vegetable oil
- Nuts/ chocolate chips/ other toppings of your choice (optional)
Directions:
- Preheat oven to 350 ℉
- Prep the baking pan by greasing the pan with the vegetable oil and lining the pan with wax or parchment paper, leaving 1-2 inches of paper over hang
- Mix all the dry ingredients together in your bowl
- Add the avocado, mixing at a medium level
- Slowly add the plant milk, and other liquid ingredients, increase the mixer to a high level
- Once there are no more avocado/cocoa powder chunks, and the mixture is a bit runny in consistency, the batter is ready
- Pour batter into the pan evenly throughout (gently banging the bottom of the pan on a towel on the counter helps the batter level out)
- If you are adding nuts or other toppings, you can sprinkle them into the batter
- Put tray into the center rack of the oven and bake for 30 minutes (if using a smaller tray bake for an additional 5 minutes)
- Once baked, take the pan out of the oven and cut into small squares and let brownies cool for 10 minutes
